What's Cookin?: Kale with Spicy Chicken Chorizo Sausage

I got the idea for this recipe from Martha Stewart's Kale with Sweet Sausage recipe. I'm not a big fan of sweet sausage so I decided to mix it up a little. Instead, I used a spicy chorizo chicken sausage from the deli at New Seasons. The sausage is really spicy so it paired nicely with the tough greens.

Kale with Spicy Chicken Chorizo Sausage
Serves 4

1/2 lb. spicy chicken chorizo sausage
1/2 sweet onion, chopped
2 cloves garlic, minced
1 - 1 1/2 lb. kale, tough steams and center ribs removed & cut into small pieces
1/2 c. water
2 tsp. balsamic vinegar
salt and pepper

1) In a large pan with a lid, cook the sausage over medium-high heat. Stir occasionally until the sausage is browned, 3-4 minutes. Add the onions and garlic and continue to cook until the onions are translucent.

2) Remove the sausage, onion and garlic mixture from the pot and set aside. Add kale to the pan in 2-3 batches, waiting for one batch to wilt before adding the next. Cook over medium heat until the kale is bright green, about 1 minute. Add about 1/2 c. water and reduce heat to medium-low. Simmer (covered) for about 15 minutes or until the kale is tender, stirring only once or twice.

3) Uncover the pot and cook until most of the liquid has evaporated. Stir in vinegar and season with salt and pepper. Add the sausage and stir in well.
