What's Cookin?: Asian-Inspired Quinoa

I experimented with this quinoa recipe. I was making quinoa as a side for a Thai-style fish. I wanted to give the quinoa a little flavor without making it too overpowering. I decided to make a very light teriyaki flavored quinoa. This quinoa recipe has just enough extra Asian flavors to go well with a variety of Asian dishes. You can mix things up by adding veggies to it or sprinkle with green onions. I kept mine plain with a drizzle of the Thai sauce. It was wonderful!!



Asian-Inspired Quinoa
Serves 4

1 c. quinoa, rinsed
1 Tbsp. extra virgin olive oil
1 clove garlic, minced
2 Tbsp. minced fresh ginger
2 c. water
2 Tbsp. soy sauce
1 Tbsp. rice vinegar
1 tsp. sugar

1) Heat olive oil in a medium sauce pot over medium heat. Add garlic and ginger to the oil and sauce for about 1 minute. Add the quinoa to the oil and toast for about 2-3 minutes.

2) Add the water, soy sauce, rice vinegar and sugar and stir well. Turn up heat to high and bring mixture to a boil. Cover the pot, reduce heat to low and simmer until all the liquid is absorbed (about 25-30 minutes).

3) Remove from heat and fluff quinoa with a fork.
