What's Cookin?: Swiss Chard with Bacon

This was a great little side dish to serve up my first Swiss Chard of the season! Even the toughest vegetable critics in your family will enjoy this dish!

Swiss Chard with Bacon

1 bunch of Swiss Chard
1 Tbsp extra virgin olive oil
4 strips of thick-cut bacon, sliced into 1/2 inch pieces
1/2 large sweet onion (I used Walla Walla Onions), sliced into 1/4 inch pieces
2 cloves garlic, minced
2 Tbsp balsamic vinegar

1) Wash swiss chard and chop stems into 1 inch pieces and set aside in a small bowl. Stack the swiss chard leaves in a pile and roll into a bundle. Slice leaves into 1/2 inch ribbons and set aside.

2) Heat oil in a large saute pan over medium heat. Add the bacon and cook until brown. Add the onions and garlic and cook until they are translucent.

3) Add the chard stems to the pan and cook for about 2-3 minutes. Add salt and pepper to taste.

4) Add the chard leaves (in batches if pan too small) and cook until tender, about 4-5 minutes. Add balsamic vinegar and stir well.

What a fantastic sounding side dish! I can imagine it being a good main dish as well, if you mix it with some pasta? Mmmmm, bacon... :-)

Holly I am definitely going to try this recipe. I grew Chard 'Bright Lights' last year and although it looked fantastic I didn't like it just steamed, so this recipe will spice it up a bit.
