What's Cookin?: Mashed Cauliflower (aka Mock Mashed Potatoes)

This is a very easy recipe to make and it tastes good! My dad, who's not a big veggie fan, liked this recipe (shock!!). If I were making this again, I would roast the garlic and maybe add some chopped rosemary. Enjoy!

Mashed Cauliflower (aka Mock Mashed Potatoes)

1 medium head cauliflower
1 Tbsp cream cheese, softened
1/4 c. grated Parmesan cheese
1/2 tsp. minced garlic
1/2 tsp salt
1/8 tsp freshly ground black pepper
1/2 tsp. chopped fresh or dry chives (optional garnish)
3 Tbsp unsalted butter

1) Set a stockpot of water to a boil over high heat. Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until cooked through. Shake and drain well in colander. Do not allow cauliflower to cool.
2) While still hot/warm, add cauliflower to a bowl. Add cream cheese, Parmesan cheese, garlic, butter, salt and pepper. Puree cauliflower mixture with an immersion blender until smooth.

3) Garnish with chives (optional) and serve hot.

Here it was served as a side dish with meatloaf.

I love making mashed cauliflower too! It's one of my favorites!

The first time I made mashed cauliflower, I was so amazed at how much it tasted just like mashed potatoes. This looked like a good recipe!
